It’s a good start,

to a new year. We celebrated in our low-key way. Playing board games, watching a movie, staying up to watch the ball drop, and make plenty of noise. We also made a new treat. Mini Cheesecakes!

They were super easy and pretty quick, considering it’s homemade cheesecake.

make the graham crumbs

add melted butter, next time I will add a little more than the recipe called for – the crust was too crumbly
put a rounded teaspoon of crust mixture in mini cupcake papers and press firmly

make filling–make sure cream cheese is soft and room temp–otherwise it will most definitely have lumps

after baking crumb crust for 5 min. take out of oven and put filling on top

bake until no longer wiggly in center–they will be puffed up and then sink to look like this. let sit 10 min, place in freezer until no longer warm

add jam or preserves-we used my daughter’s homemade jam from fresh raspberries that she entered in the fair

They were delicious! Next time, I will make more crust per batch of filling. We had left over filling, probably enough to fill 12 more cups. My daughter wants to make these for her 4-H competition coming up. She’ll have no trouble making this recipe. It’s very straight forward and fun 🙂
